Fresh Mango Salsa

Vibrant colors and a riot of flavors! Easy to prepare dish with sweet, spicy and tangy deliciousness. Serve it with chips, tacos, as a side or salad!
Ingredients
  • 2 large ripe mangoes, peeled, diced
  • 1 cup tomatoes, chopped
  • ½ cup red onion, chopped (optional)
  • ¼ cup cilantro leaved, chopped
  • 1 jalapeño, finely chopped
  • 1 lime, juiced
  • 1 teaspoon black pepper, freshly ground
  • salt to taste
Method
  1. In a large bowl, combine diced mangoes, tomatoes, cilantro and jalapeño.
  2. Add lime juice, freshly ground pepper and salt to taste. Mix well.
  3. Let this sit for 10-15 mins for flavors to mingle together.
  4. Serve it with chips. I love those scoops type chips, fun and convenient!
My Notes
Remove the seeds from the jalapeño pepper to go easy on the heat.

I do not like onion in my salsa when I am serving it with chips, but if you like it then add 1 finely chopped, medium size red onion.

You can also add 1 clove of garlic, minced for added depth of flavor.

You can store the salsa in the refrigerator, covered, for few days. Though fresh salsa is best in my opinion.
