Protein-packed Power Balls

Naturally Sweetened by dates, loaded with healthy peanut butter-y proteins and fiber from rolled oats with all the dark-chocolate and chia seeds goodness, easy to whip up in 15 mins.
Ingredients
  • 1 cup dates, pitted
  • ¼ cup dark chocolate, roughly chopped
  • 1 tablespoon chia seeds or flax seeds
  • 3 tablespoons peanut butter
  • ⅔ cup rolled oats
Method
  1. Soak dates in warm water for 10 minutes. Pat dry. If they are already soft then skip this step.
  2. Pulse the dates in a food processor until broken into small pieces.
  3. Add dark chocolate, peanut butter, chia seeds and oats and pulse a few times or until the whole mixture is combined but do not overly process it.
  4. Roll into 1-inch balls using both your hands to mold it together.
  5. They are good to go at room temperature or if you would want, put them in the refrigerator for 15 minutes.
My Notes
I had baked/toasted the rolled oats before putting them into the mixture for 5-8 mins at 350 degrees F. This is certainly optional but i like it more this way.

If you soak the dates, do pat them dry well before pulsing.

Store in an airtight container or zip-lock bag, keeps well for 7-10 days.
