This is my absolute favorite "goes on everything" sauce - spread it on sandwiches, wraps and burgers. Thin it out and pour it on salads as dressing, or simply dip your snacks or chips right in to it. Its not only fresh and vibrant green, its also very low fat healthy sauce thats creamy, spicy, nutty and tangy all at the same time!
Ingredients
  • 1 bunch cilantro, washed well and roughly chopped ( including stems )
  • 2-4 medium spiced green chilies, chopped in half ( I used about 4 long mild chilies, Thai green chilies are more spicier, use 1-2 or 1 medium size jalapeƱo )
  • 3 tablespoon lemon juice ( 1 medium sized )
  • 3 tablespoon tahini
  • ¼ cup extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
Method
  1. Gather all the ingredients and put everything in a blender and blend until smooth and spreadable consistency. Scrape the sides of the blender in between to help everything blend well.
  2. Taste test and adjust salt and pepper if needed.
  3. If you would like it thinner add more olive oil or water in tablespoon increments.
  4. Transfer it an airtight glass container and store it in the fridge for uptown a week.
  5. Enjoy it as a spread on burgers, wraps and sandwiches. Thin it out more and use it as a dressing on salads or use as a dipping sauce.
My Notes
If you are not used to the spice then de-seed the chilies and then add it to the remaining ingredients. OR you could blend one chili at a time and check the spice level to suit your taste buds, though the tahini makes this sauce milder in my opinion.

If your sauce tastes more on bitter side, you may have added more tahini, add more lemon juice and it should be fine.
